Chicken Fajita Taquito Rolls

Ingredients

  • 1 teaspoon Olive Oil
  • 2 whole Bell Peppers, Seeded And Sliced
  • 1 whole Onion, Sliced Thin
  • 4 cups Cooked, Shredded Chicken, A Rotisserie Chicken Works Well Also
  • 2 Tablespoons Fajita Seasoning
  • 1 cup Shredded Mexican Blend Cheese
  • 20 whole (6-inch) Flour Tortillas, You May Use Less Or More Depending On How Much You Fill Them
  • Non-stick Cooking Spray
  • Optional For Serving: Sour Cream, Pico De Gallo, Chopped Cilantro, Your Favorite Dipping Sauce

Preparation

Preheat oven to 425 F.

Heat olive oil in a skillet over medium high heat then add peppers and onion and cook until onion is clear. Remove skillet from heat.

Cover a large baking sheet with aluminum foil and spray the foil lightly with cooking spray.

In a large bowl mix together chicken, fajita seasoning, peppers and onion mixture and cheese. Mix well.

Lay your tortillas out on a work surface. Spoon 2-3 tablespoons of the chicken mixture into a flour tortilla and roll it up.

Place the Taquito Roll Roll seam-side down on the baking sheet. Repeat the filling and rolling process until you are out of tortillas. Once finished, spray the tops of the taquitos with non-stick cooking spray or brush with olive oil.

Place pan in oven and bake for 15-20 minutes, or until edges and tops are golden. Then remove the pan from the oven and let the taquitos cool for a couple of minutes. Serve with your favorite toppings.
