Description

Chicken Francaise is an Italian-American dish consisting of cooked chicken breast cutlets with lemon wine sauce!

Ingredients

  • 4  Boneless, Skinless Chicken Breast Halves
  • ¼ cups Olive Oil
  • 3  Large Eggs, Cold
  • 3 Tablespoons Fresh Parsley, Chopped, Divided, Plus More For Garnish
  • ½ teaspoons Salt
  • ½ teaspoons Ground Black Pepper
  • 2 Tablespoons Grated Parmesan Cheese (or Any Other Hard Cheese)
  • ½ cups Flour
  • ½ cups Butter, Cubed
  • ½ cups Dry White Wine
  • ½  Lemon, Juiced

Preparation

Pound chicken breasts to 1/2 inch thickness. Heat olive oil in a large skillet.

Break the eggs into a bowl and whisk. Add 2 tablespoons of parsley, salt and pepper, Parmesan, and whisk to combine.

Spread the flour in a bowl or a plate. Cover chicken pieces from both sides in flour, then dip into the egg mixture.

Place the chicken pieces in the skillet and cook until golden on both sides. It should take about 2 minutes per side. Transfer to a plate.

Return the skillet to medium heat. Melt butter and add wine and lemon juice. Simmer for a minute to reduce the sauce a little bit. Add remaining 1 tablespoon parsley.

Pour the sauce over the chicken and garnish with some chopped parsley.
