Chicken Gruyere Casserole with Spinach and Mushrooms

Description

Busy doesn’t have to mean drive-through! This one-pot meal comes together in minutes, making it a perfect weeknight dinner!

Ingredients

  • 5  Large Eggs
  • ¾ cups Milk
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • 2  Boneless, Skinless Chicken Breasts
  • ½  Onion, Finely Diced
  • 1-½ cup Mushrooms, Sliced
  • 1-½ cup Spinach, Lightly Packed
  • 1 cup Gruyere Cheese, Grated
  • Butter, For Greasing Dish

Preparation

1. Preheat oven to 350 F.
2. Grease a 3-quart casserole dish with butter and set aside.
3. Add eggs, milk, salt and pepper into a medium-sized bowl and whisk to combine.
4. Cut chicken into cubes. Add chicken, onion, mushrooms and spinach into the egg mixture and stir to combine.
5. Pour egg mixture into prepared casserole dish and top with Gruyere cheese.
6. Bake until top is bubbly and golden brown, 40-45 minutes.
7. Remove from heat and allow to cool 5-10 minutes before serving.

I wanted something that would be easy to make during the week when I’m low on energy and time and the drive-through seems like the only answer. A no muss, no fuss recipe that didn’t require a lot of work and didn’t make a ton of dishes. Mission accomplished!
