Description
Simple and healthy chicken in sweet and sour Asian sauce.
Ingredients
- 1 kilogram Chicken Breasts (boneless)
- 1-½ Tablespoon Salt, Divided
- 1 Tablespoon Olive Oil
- 500 grams Passata Di Pomodoro, Tomato Sauce
- 190 grams Silverskin Onions, Pickled
- 900 grams Peaches, Canned, Light Syrup
- 350 grams Green Beans, Frozen
- 1 Tablespoon Sambal Ulek/Sriracha (optional)
- 2 Tablespoons Asian Seasoning Mix, Preferably Without Salt
- 5 Tablespoons Xanthan Gum
- 9 Tablespoons Natrena (liquid Sweetener)
- Cooked Rice, Optional, For Serving
Preparation
1. Chop the chicken breasts into medium cubes. Sprinkle half a tablespoon of salt over them. Heat the olive oil in a large soup pot over medium-high heat and cook the chicken until it is slightly brown on all sides.
2. While the chicken is cooking, mix the tomato sauce, silverskin onions, peaches, green beans, Sambal, Asian seasoning mix and one tablespoon of salt (adjust if your seasoning mix already contains salt) in a large pan. Bring it to a boil over medium high heat then lower heat a bit and let it simmer for 5-8 minutes. Add the chicken to the sauce and simmer for 6 more minutes.
3. Sprinkle the xanthan gum and sweetener into the pan one tablespoon at a time. Stir shortly in between adding each tablespoon. Stir for about 30 seconds, until the sauce thickens. Take the pan off the heat.
4. Serve warm with white rice. Also delicious on its own!
