Description
Another recipe that came out of a chili lime kick I was on: delicious potatoes that can go in a hearty breakfast burrito!
Ingredients
- 3 whole Potatoes (I Used 2 Russets And 1 Sweet Potato), Peeled And Diced
- 3 Tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Garlic Powder
- 1 Tablespoon Chili Powder
- 2 Tablespoons Lime Juice
- 6 whole Burrito Sized Tortillas
Preparation
Preheat oven to 425ºF. Put diced potatoes on a baking sheet and drizzle generously with olive oil. Sprinkle with salt, garlic powder, chili powder, and lime juice. Toss potatoes to coat evenly. Roast for about 15-20 minutes, or until tender and a little crispy.
Put in a burrito-sized tortilla and top with some eggs, cheese, and favorite salsa. These would be great with some sausage also, for those that need to put some meat in there!
