Description

These Shrimp Stuffed Avocado Shells perfectly combine the tartness of lime juice and the heat of the taco seasoning. A great appetizer or a light dinner!

Ingredients

  • 1 pound Shrimp, Peeled And Deveined
  • 1  Lime, Juiced
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Taco Seasoning
  • 2  Large Avocados, Halved, Pitted, Cubed, Shells Saved
  • 1  Tomato, Diced
  • ½ cups Canned Artichoke Hearts, Roughly Chopped
  • ⅓ cups Red Onion, Chopped
  • ¼ cups Capers
  • 2 Tablespoons Olive Oil
  • Salt And Pepper, to taste

Preparation

In a bowl, add shrimp, lime juice, garlic, and taco seasoning. Toss until shrimp are coated and marinate for 15 minutes or more.

Add shrimp with all the marinade to a skillet and cook until cooked through, 3–5 minutes. When ready, chop them roughly if they are big or leave as they are if they are small.

Combine cubed avocado, tomato, artichoke hearts, red onion, capers, olive oil, and salt and pepper in a bowl. Add cooked shrimp and stir to combine. Fill avocado shells with the mixture.
