Description
Gluten-free and dairy-free banana bread with dark chocolate chips.
Ingredients
- 110 grams Dairy Free Spread
- 110 grams Caster Sugar
- 2 Eggs
- 3 Large Ripe Bananas
- 175 grams Gluten Free Self Raising Flour
- 50 grams Ground Almonds
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Baking Powder
- 100 grams Dairy Free Dark Chocolate, Roughly Chopped
Preparation
Preheat oven to 180ºC (355ºF).
Cream the dairy-free spread and sugar together until light and fluffy. Add eggs, beating well between each addition.
Mash bananas and add to the mixing bowl. Add the dry ingredients and mix well. Stir in chocolate chips
Line a 1-pound loaf tin with baking parchment or grease it well. Transfer batter to tin and bake for 1 hour and 15 minutes. Remove from the tin and leave to cool on a rack for 1 hour before slicing.
