Chocolate Oat Breakfast Cookies

Description

Delicious chocolate cookies with whole grains and less sugar than most breakfast cereals. Great for breakfast at home or on the go as well. We also eat these for snacks and guilt-free desserts.

Ingredients

  • ⅔ cups Whole Wheat Flour
  • 5 Tablespoons Cocoa
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ cups Butter, Melted
  • 2 Tablespoons Brown Sugar
  • 3 Tablespoons White Sugar
  • 1 teaspoon Vanilla
  • 6 Tablespoons Oat Flour
  • ¼ cups Chopped Chocolate (optional)
  • ¼ cups Chopped Pecans (optional)

Preparation

In a large bowl mix whole wheat flour, cocoa, baking soda, and salt.

In a different bowl, cream butter and sugars. Add vanilla.

Pour wet ingredients into dry and mix. Stir in oat flour. (I make my own oat flour by putting quick oats in a blender and blending until fine.) Then add chopped chocolate or pecans (or both if you like to live dangerously).

Roll into balls and then smash a bit. And by ‘roll’ I mean press into balls with your hands, because the dough is very, very crumbly (in fact it looks like crumbs). If it’s too crumbly add another 1 Tablespoon of melted butter or 1 Tablespoon of milk.

Bake at 350F for 7-9 minutes.
