Great lunch or dinner for two!
Ingredients
- 2 Tablespoons Canola Oil
- 8 ounces, weight Chorizo, Sliced
- 1 whole Red Onion, Sliced Thin
- 2 whole 8-inch Flour Tortillas (I Use Wheat)
- ¼ cups Sour Cream
- 1 bunch Chopped Cilantro
- 1 whole Hass Avocado, Pitted, Sliced
- Mexican Shredded Cheese Blend (optional)
Preparation
In a skillet over medium heat, add canola oil. Add chorizo and sliced onions and cook 8–10 minutes. Meanwhile, warm tortillas if desired.
Lay tortillas flat on a clean work surface. Add sour cream, cilantro, sliced avocado, cooked chorizo, onions and cheese if desired. Fold ends and roll up. I like to cut these in half and serve.
