Cinnamon Apple Blender Muffins

Description

These gluten-free flourless muffins are entirely made in a blender. Takes only 5 minutes to prepare and no mess to clean up! Simply a delicious and healthy muffin that everyone will enjoy.

Ingredients

  • 2 cups Rolled Oats
  • 1  Apple, Peeled, Sliced (I Used Honeycrisp)
  • 1  Ripe Banana
  • 2  Eggs
  • ½ cups Apple Sauce
  • ⅓ cups Agave Or Honey
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 2 teaspoons Cinnamon
  • 1-½ teaspoon Vanilla Extract

Preparation

Preheat oven to 400ºF.

Add all the ingredients to your blender and pulse for about 1 minute or until well combined. This may vary depending on the machine you are using. I used a Vitamix, which took about 50 seconds.

Pour the batter into muffin cups. If you don’t have paper muffin cups similar to the ones I used, you can use a muffin pan. It’s your choice.

Sprinkle with oats and sparkling sugar for a crunchy bite and bake for 20 minutes or until inserted toothpick comes out clean.
