Description
A healthy pancake filled with fresh apples, a pinch of cinnamon and Greek yogurt.
Ingredients
- ⅓ cups Plain Greek Yogurt
- 2 whole Egg Whites
- ½ teaspoons Vanilla Extract
- ½ cups White Whole Wheat Flour
- 1 teaspoon Ground Cinnamon
- ½ teaspoons Baking Soda
- ½ teaspoons Sugar
- 1 dash Salt
- ¼ cups Non-fat Milk
- ½ cups Apples, Peeled And Diced
Preparation
Mix Greek yogurt, egg whites and vanilla extract into a small bowl.
In a separate bowl, combine flour, cinnamon, baking soda, sugar, and salt.
Combine both mixtures and whisk till evenly mixed. Add in the milk, stir, and then fold in apples.
Spray a nonstick skillet with cooking spray and place 1/4 cup batter onto skillet. Cook over medium heat till bubbles start appearing through the top of the pancake and then flip, about 1-2 minutes on each side. (I flattened out my batter with the spatula to cook more evenly and sprayed cooking spray between each batch of pancakes.)
Makes 8 pancakes. Serves 2.
Notes:
The thickness of your Greek yogurt may make the batter thick. Just add a pinch of milk at a time to make more of a pancake batter.
If you have leftover apples, place them in a microwave safe bowl, add a dash of cinnamon, 1 teaspoon brown sugar and a splash of water. Cover and microwave for 1 minute and use as a topping for the pancakes.
