Need a batch of cookies quick for family, school function, for work? It doesn’t get any easier than this.
Ingredients
- 16 ounces, weight Refrigrated Sugar Cookie Dough (I Use Pillsbury)
- 1 Lemon, Zest And Juice
- 1 Lime, Zest And Juice
- 1 Orange, Zest And Juice
- FOR THE FROSTING:
- ¼ sticks Sweet Cream Butter, Softened
- 1-½ cup Confectioners Sugar
- 1 Tablespoon Orange Zest
Preparation
Note: Preparation time does not include 30 minute refrigeration time.
In a large mixing bowl, add refrigerated cookie dough and all citrus zest and juice. Using clean hands, mix to combine. Roll into a ball and refrigerate 30 minutes.
To make the frosting, in a smaller bowl, add frosting ingredients and use a handheld mixer to combine. Set aside.
Preheat oven to 400ºF. Remove bowl of dough from refrigerator and use a small (fruit/melon) scoop to drop small dough balls on nonstick baking sheet pans. Place into the oven on the middle rack and bake 8 minutes or until lightly brown. Remove to a cooling rack. When cooled, frost each one and watch them just disappear!
