It’s the first Friday of Lent for some. Since during Lent, Fridays usually mean fish, I’ll try to come up with fish recipes to help you “Lenters” along! This Ceviche is a refreshing way to enjoy some fresh scallops. The resort my husband and I stayed in for our honeymoon had the world’s best ceviche. At least that was my opinion. I literally would order it for lunch, my snack, my appetizer and my dessert.
Ingredients
- 10 Large Fresh Sea Scallops, Diced
- ¾ cups Fresh Lemon Juice
- ¾ cups Fresh Lime Juice
- ¼ cups Orange Juice
- ½ Large Red Onion, Diced
- 2 cloves Large Cloves Garlic, Minced
- 1 Avocado, diced
- 1 Tablespoon Fresh Cilantro, Minced
- 1 Roma Tomato, Diced
- 2 Tablespoons Splenda Or Sugar
- Salt And Pepper, to taste
Preparation
In a non-reactive bowl (glass), combine all ingredients. Mix well. Cover and refrigerate for at least 2 hours.
I found I liked the flavor better the second day.
