Ingredients

  • 1 whole Red Bell Pepper, Diced
  • 1 whole Pineapple, Diced
  • 4 whole Kiwis, Skins Removed And Diced
  • 1 bulb Fennel, Sliced In Half, Cored And Finely Diced
  • 2 whole Star Fruits, Thinly Sliced
  • 1 whole Lime (for The Juice)
  • ¼ cups Cilantro, Chopped
  • 1 pinch Coarse Salt And Freshly Ground Pepper
  • 3 Tablespoons Extra Virgin Olive Oil

Preparation

Once all of your fruits and veggies are diced, combine them in a large bowl.

For the dressing, squeeze the lime juice into a smaller bowl. Add the chopped cilantro and a good pinch of salt and pepper. Whisk the oil in, creating the dressing.

Toss the salsa with the dressing and serve in mini cups with crackers, or even on top of grilled fish or chicken.
