Coconut Cardamom Granola

Description

Perfect granola. Crunchy, but not too crunchy. Sweet, but not too sweet. It’s just right.

Ingredients

  • 2-½ cups Quick Cook Oats
  • ¾ cups Raw Chopped Pecans
  • ½ cups Raw Chopped Walnuts
  • ½ cups Shredded Coconut
  • ¼ cups Sesame Seeds
  • ¼ cups Brown Sugar
  • ¼ cups Maple Syrup
  • ⅓ cups Coconut Oil, Melted
  • 1 teaspoon Vanilla
  • ½ teaspoons Salt
  • 1 teaspoon Cardamom
  • ¾ cups Golden Raisins

Preparation

Preheat oven to 300ºF. Add all ingredients, except raisins, to a large bowl to a large bowl and stir until everything is moistened.

Empty bowl onto a rimmed cookie sheet and bake for 30 minutes, stirring halfway through. Immediately after removing granola from the oven, add raisins and stir to combine. Allow to cool and transfer to a cute jar if you have one.
