Ingredients
- 2 cups Medjool Dates, Pitted And Chopped
- 1 cup Unsalted, Roasted Almonds
- ½ cups Rolled Oats
- ⅓ cups Unsweetened Coconut, Plus 1/4 Cup For Coating
- 2 Tablespoons Honey
- ½ teaspoons Cinnamon
- 1 pinch Sea Salt
Preparation
Remove pits (if necessary) from dates, give them a rough chop and add to a food processor bowl along with almonds. Pulse about 8-10 times, or until dates and almonds are broken down to small pieces.
Add rolled oats, 1/3 cup coconut, honey, cinnamon and salt. Process until everything is well-combined.
Empty snack bite mixture onto a rimmed plate or baking sheet. By teaspoonfuls, roll into 1-inch balls. Roll bites into remaining 1/4 cup coconut and press to adhere.
