Coconut Ginger Granola

Description

A delicious and healthy granola made with coconut oil and crystallized ginger. It makes a perfect breakfast paired with yogurt and fruit!

Ingredients

  • ½ cups Honey
  • ¾ cups Coconut Oil
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Nutmeg
  • 3 cups Rolled Oats
  • ⅔ cups Sliced Almonds
  • ⅓ cups Chopped Brazil Nuts (or Other Nut)
  • ⅓ cups Flaxseed
  • ½ cups Dried Cranberries
  • 1 cup Coconut
  • 1 whole Lemon Zest (zest Of 1 Lemon)
  • 3 Tablespoons Crystallized Ginger, Diced

Preparation

In a small saucepan over medium heat, combine honey and coconut oil, stirring just until melted and smooth. Add cinnamon and nutmeg and mix well.

In a large mixing bowl, combine remaining ingredients. Pour honey mixture over oat mixture and toss to coat.

Pour onto a large baking sheet, spreading into one even layer. Bake at 325ºF for 20-30 minutes, stirring every 10 minutes, until mixture is toasted to a nice brown color.

Allow to cool completely before eating.
