A super simple and delicious pie that is perfect this time of year. You may want to make two as it goes fast!
Ingredients
- 1 whole Store Bought Frozen Pie Crust
- FOR THE FILLING:
- 3 whole Eggs, Beaten
- 1-½ cup Granulated Sugar
- 1 whole Lemon, Zest And Juice
- 1 cup Sweetened Coconut Flakes
- 8 Tablespoons Unsalted Butter, melted
- 1 teaspoon Vanilla Extract
- 1 pinch Salt
- FOR THE TOPPING:
- ½ cups Coconut Flakes, Lightly Toasted
Preparation
Note: This is pretty much a mix-and-dump-into-pie-crust pie, so yes, it’s really that easy. The only time intensive part is waiting.
Preheat oven to 350ºF.
In a mixing bowl, mix all the filling ingredients until nice and smooth. Pour into the frozen pie shell. Place the pie onto a cookie sheet to prevent any spillage, and then bake for 1 hour.
After 1 hour, remove the pie from the oven. Top with toasted coconut flakes. Let the pie set and then place into the refrigerator for at least 1 hour to completely cool before slicing and serving.
