Description
Unbaked peanut butter and oat cookie balls.
Ingredients
- 4-½ cups Rolled Oats
- 1-½ cup Flax Seed Meal
- 1 cup Mini Chocolate Chips
- 2 cups Creamy Peanut Butter
- ½ cups Coconut Oil
- ½ cups Honey
- ½ cups Corn Syrup
- 2 teaspoons Vanilla
Preparation
In a large bowl, stir together oats, flax seed meal, and mini chocolate chips. Add peanut butter, coconut oil, honey, corn syrup, and vanilla. Using a wooden spoon or spatula, stir until thoroughly combined. The mixture will be very thick!
Shape the mixture into tablespoon-sized balls. I use a cookie scoop for portioning, then roll the balls by hand.
Store in the refrigerator in an airtight container up to 1 month.
