Crab Salad in Avocado Boats

A cool, rich and creamy summer appetizer.

Ingredients

  • 1 pound Jumbo Lump Crab Meat
  • 1  Red Bell Pepper, Diced
  • 3 Tablespoons Parsley, Chopped
  • 3 Tablespoons Mayonnaise
  • 1 whole Lemon, Cut In Half
  • 2  Avocados, Halved
  • Salt And Pepper
  • Old Bay Seasoning (to Garnish)

Preparation

In a large bowl mix together crab meat, red bell pepper, parsley, and mayonnaise. Squeeze half of a lemon into the mixture and season with salt and pepper.

Split avocados; remove pits and shell. Squeeze other half of lemon on avocado halves and sprinkle with salt and pepper.

Pile crab mixture into center of avocados. Sprinkle Old Bay on top. Serve with lemon wedges.
