Description
What could be better than a perfect peach bellini? A cranbellini! Cranberry puree mixed with prosecco to make a drink that’s almost as good as its name.
Ingredients
- ½ pounds, 2-⅝ ounces, weight Fresh Or Frozen Cranberries
- 5 Tablespoons Superfine Sugar
- 6 tablespoons, 2 teaspoons, 4-⅝ pinches Water
- 2 bottles (750ml Size) Champagne Or Prosecco
Preparation
1. To make the purée, put the cranberries, sugar and water in a sauce pan and cook over a low heat for 15–20 minutes until the cranberries begin to break down.
2. Let the mixture cool and used a food processor to make a purée. Pass it through a sieve to get rid of any seeds.
3. Put a teaspoon of the cranberry purée into the bottom of a champagne flute or wine glass and top up with fizzy wine of some description (prosecco or your choice). Stir gently to mix.
