Super healthy. My kids will eat these without any syrup or even the powdered sugar.
Ingredients
- 1 whole Orange
- 3 whole Eggs, Separated
- ¼ cups Unsalted Butter, melted
- ¼ cups Sugar
- ½ teaspoons Salt
- 1 teaspoon Vanilla
- ¾ cups Cottage Cheese
- ¾ cups All-purpose Or White Whole Wheat Flour
- ¼ cups Powdered Sugar, To Dust On Top Of Pancakes
Preparation
Zest orange. Peel orange and remove non-edible parts. Separate egg yolks from whites. Place the orange, orange zest, egg yolks, butter, sugar, salt, vanilla, and cottage cheese in a small bowl. Puree the mixture. Stir in flour. Let batter rest for 10 minutes.
Beat egg whites to hold soft peaks. Fold into the batter.
Heat a skillet to just below medium heat. Pour 2 tablespoons of batter at a time. Wait for bubbles, flip, and cook the other side. Dust with powdered sugar.
