Cheesy potato bliss!

Ingredients

  • 2 whole Large Baking Potatoes, Sliced Thick
  • 1 whole Medium Onion, Sliced
  • 1 cup Shredded Cheese
  • 1 cup Cooked Breakfast Meat Of Your Choice (optional)
  • ½ cups Chopped Green Peppers
  • 1 Tablespoon Butter, Or More To Taste
  • Salt And Pepper, to taste

Preparation

Layer the potatoes, onion, cheese, meat, and peppers in a greased crock pot. Sprinkle top with salt and pepper. Dot butter over top of mixture. Cover and cook on low for 6-8 hours, depending on thickness of the potatoes.

This works great with pre-cooked chopped bacon, crumbled sausage, or anything you have leftover in the fridge. It would be an excellent way to use up taco meat or barbecue.
