Description
Skip the take-out this weekend and make this crockpot chicken and broccoli instead! Made in a slow cooker, this recipe is so easy to make and tastes amazing!
Ingredients
- FOR THE CHICKEN AND BROCCOLI
- 1 cup Chicken Broth
- ½ cups Soy Sauce
- 1 Tablespoon Hoisin Sauce
- ¼ cups Dark Brown Sugar (packed)
- 1 Tablespoon Sesame Seed Oil
- 4 cloves Garlic, Minced Or Pressed
- 1-½ pound Boneless, Skinless Chicken Breasts
- 2 Tablespoons Cornstarch
- ¼ cups Water
- 1 head Broccoli Cut Into Florets
- FOR THE RICE:
- 1 cup Long Grain Rice
- 2 cups Water
- 1 teaspoon Salt
- 1 Tablespoon Unsalted Butter
Preparation
For the crockpot chicken and broccoli:
Whisk together chicken broth, soy sauce, hoisin sauce, brown sugar, sesame seed oil, and garlic cloves.
Place chicken breasts in the crockpot and pour the sauce over the chicken. Cover and cook on low for 4 hours.
Mix together cornstarch and water and stir it into the crockpot. Stir in broccoli florets. Cover and cook on high for 1 hour.
Remove the chicken, cut into large chunks, and place it back in the crockpot. Serve immediately over rice!
For the rice:
Place rice, water, salt, and butter in a medium sized saucepan. Bring to a boil. Cover, lower heat to low, and simmer for 15 minutes. Fluff with a fork.
Notes: If you’re gluten-free, make sure your soy sauce is gluten-free, too!
