Description
These homemade crockpot Swedish meatballs are so easy to make and are made healthy and low carb with a few keto-friendly substitutions.
Ingredients
- 2 Tablespoons Butter
- ⅓ cups Diced Onion
- ½ teaspoons Allspice
- 3 cloves Garlic, Minced
- 1-½ pound Ground Beef
- ½ cups Milk
- 1 Large Egg, Beaten
- 1 cup Pork Rinds, Crushed
- 2 teaspoons Worcestershire, Divided
- ½ teaspoons Kosher Salt
- Pepper To Taste
- 1 cup Beef Broth
- 1 cup Heavy Cream
- 1 teaspoon Xanthan Gum
Preparation
In a small skillet over medium heat, add butter and onion. Cook onion until softened, 5–10 minutes. Add allspice and garlic and cook for 1 minute more. Remove from heat and set aside.
In a large bowl, add ground beef, milk, egg, pork rinds, 1 teaspoon Worcestershire, onion mixture, salt and pepper. Mix well and form into meatballs.
Add meatballs to the crockpot and pour over beef broth. Cook on low for 8 hours or high for 4 hours. When the time is finished, remove meatballs from crockpot and set aside.
Add heavy cream, remaining Worcestershire, and xanthan gum to the liquid in the crockpot. Stir well to combine and let thicken.
Add meatballs back to the croc pot and stir. Serve.

Notes:
• You can use a mixture of ground beef and pork or all beef if you like.
• If you prefer not to use cow’s milk, you can use your milk of choice.
• You can use breadcrumbs instead of pork rinds if you are not following a low carb or keto diet.
