Description

It’s like eating a taco in soup form! And it freezes beautifully. Feel free to use ground turkey and spicy taco seasoning and spicy ranch seasoning if you wish.

Ingredients

  • 1-½ pound Ground Chuck Or Ground Beef
  • 1  Medium Yellow Onion, Chopped
  • 1-½ cup Canned Diced Tomatoes, Drained
  • 15-½ ounces, weight Canned Pinto Beans, Drained And Rinsed
  • 15-¼ ounces, weight Canned Whole Kernel Yellow Corn, Drained And Rinsed
  • 1 cup Beef Stock
  • 1 cup Water
  • 1 package (1 Oz. Size) Taco Seasoning
  • 1 package (about 1 Oz. Size) Dry Ranch Dressing Mix
  • Salt And Freshly Ground Black Pepper To Your Tastes

Preparation

Brown beef with onion and cook until meat is no longer pink and onions are tender. Drain fat and set aside.

In a large bowl, combine tomatoes, beans, corn, beef stock, water and seasonings until well mixed. Place meat and vegetable mixture in a large slow cooker that’s been lightly sprayed with nonstick cooking spray and mix until well combined. Allow to cook for 8 hours on low. Stir occasionally.

Serve with your favorite taco toppings if desired.
