Remember when you were a kid and your mom wasn’t looking and you thought substituting corn chips for bread would make the perfect sandwich? Well, this is it: a crunchy roast beef sandwich with an accompanying cast of provolone cheese and tomato topped off with a dollop of mustard. Taste the crunch and feel like a kid again.

Ingredients

  • ⅛ pounds Deli Roast Beef
  • 1  Tomato
  • 6 slices Provolone Cheese
  • 1 bag (about 10 Oz. Size) Scoops Chips
  • 4 Tablespoons Mustard
  • 2 Tablespoons Parsley Flakes

Preparation

Chop roast beef, dice tomato and cut 1/4-inch strips of provolone to fit inside corn chip scoops.

Fill scoops with chopped roast beef. Criss cross roast beef with 2 strips of provolone. Top provolone with diced tomatoes.

Garnish with a dollop of mustard and a sprinkle of parsley.
