Cucumber Rolls

    Description

    Cucumber rolls filled with shrimp, hard-boiled eggs and cream cheese.

    Ingredients

    • 1  Egg, Hard Boiled
    • 3-½ ounces, weight Boiled Shrimp, Peeled And Deveined
    • 2 Tablespoons Cream Cheese
    • 1 bunch Parsley, Chopped
    • 1 pinch Salt
    • 1 pinch Black Pepper
    • 1  Long, English Cucumber, Washed

    Preparation

    Mince the egg and shrimp using a food processor. Combine them with the cream cheese in a small bowl. Add parsley, salt and pepper. Mix well and set aside.

    Thinly slice the cucumber, cutting lengthwise. Carefully roll up each cucumber slice, leaving a space in the center and fix with a toothpick.

    Fill every cucumber roll with cheese/shrimp stuffing. Serve cucumber rolls immediately.
