Description
This curry chicken loaf is so comforting and flavorful with its warm spices. It’s also lean and simple to make for a fantastic winter meal!
Ingredients
- 2 pounds Ground Chicken
- 6-½ teaspoons Yellow Curry Powder, Divided
- ½ cups Breadcrumbs
- 1 container (5 1/3 Oz. Size) Plain Greek Yogurt, Divided
- 1 Tablespoon Dijon Mustard
- 1 Tablespoon Fresh Cilantro, Roughly Chopped
- 1 whole Onion, Finely Diced
- 1 pinch Salt And Black Pepper
- ½ teaspoons Garlic Powder
- 2 whole Eggs
- ½ Lemon, Zested
Preparation
Preheat oven to 375ºF and line a sheet tray with foil.
Combine chicken, 6 teaspoons of the curry powder, bread crumbs, 1 tablespoon of the Greek yogurt, Dijon mustard, cilantro, onion, salt, pepper, garlic powder and eggs in a large mixing bowl. Stir it all together until well combined.
Turn mixture out onto the tray and form into a tight loaf. Stir remaining Greek yogurt, remaining 1/2 teaspoon curry powder and lemon zest in another bowl and spread it over the top of the loaf.
Bake chicken loaf for about 50 minutes, until bubbly on top, slightly crisp on the outside and cooked through. Let rest for a few minutes, then slice and enjoy with your favorite sides!
