Description
Delicious chicken salad on toasted cranberry pecan bread. This was a local favorite at my deli.
Ingredients
- 1 whole Roasting Hen, Cooked, Deboned And Shredded
- ¼ cups Dill Pickle Relish
- 1 whole Large Red Delicious Apple, Diced
- 1 bunch Green Onion, Diced
- ¼ cups (Real) Mayonnaise
- ¾ cups Diced Red Grapes
- 1 loaf Cranberry Pecan Bread Or Loaf Of Your Choice
- 1 bunch Leaf Lettuce
- 2 whole Tomatoes, Sliced
Preparation
Place shredded chicken in a large bowl. Add relish, apple and onions and toss. Add mayo, adjusting more or less to taste. Gently toss in the grapes.
Toast the bread. Place lettuce and sliced tomatoes on one side. Spread chicken salad on the other. Put the slices together and cut the sandwich in half. Serve.
