Description
Warm, hearty, dorm-friendly French toast. All you need is a microwave, a mug, and a fork! Not only is it super simple to make, but there’s nothing unhealthy here. Whole grain bread and egg combine with almond milk and spices to make a balanced breakfast with carbs, healthy fat and protein. Garnish with your favorite nut butter and fresh berries, and this is a dish you can really feel good about (body and soul)!
Ingredients
- 1 whole Egg
- ¼ cups Unsweetened Vanilla Almond Milk
- 1 teaspoon Vanilla Extract
- 1 teaspoon Cinnamon
- 2 slices Whole Wheat Bread
- 1 teaspoon Almond Butter, For Topping
- ¼ cups Fresh Blueberries For Topping
Preparation
Mix egg, milk, vanilla, and cinnamon, beating the egg yolk with a fork. Tear up the bread into small, bite-sized pieces and drop into the mixture. Stir well to coat. Transfer to microwave safe mug or bowl.
Microwave on high for 1 1/2 – 2 minutes, or until liquid is mostly soaked up and mixture appears set. Add toppings, and enjoy! (I used Justin’s maple almond butter and fresh blueberries. This would also be great with a light drizzle of maple syrup and a pinch of vanilla protein powder.)
