Description
A family recipe from my mother-in-law. This buttery, delicate oven pancake will impress your guests, but they’ll have no idea how easy it was to make. It’s a family favorite at our house, drizzled with syrup, or dusted with powdered sugar. Or both!
Ingredients
- 3 Tablespoons Butter
- 3 whole Eggs
- ½ cups Flour
- 2 dashes Salt
- 1 cup Milk
Preparation
Preheat oven to 425ºF. Put butter in a 10-inch cast iron skillet and place in the oven to melt (very important so your pan is the same temperature as the butter).
In a separate bowl, whisk eggs, flour and salt together in a bowl.
When butter is melted, pour into the flour mixture and whisk well.
Add milk LAST and whisk until blended.
Pour into the cast iron skillet and bake 15–20 minutes, or until fluffy like a popover, and lightly browned.
Serve with powdered sugar (my favorite way) or syrup (my husband’s favorite way).
