Easy Beef Enchildas

Description

This is a quick and easy recipe that my family and I enjoy. Let me warn you that there is nothing healthy about this dish, but it is delicious! I hope you enjoy.

Ingredients

  • 1 pound Ground Beef
  • 1 can (19 Oz. Size) Enchilada Sauce (I Prefer Old El Paso), Divided
  • 2 cups Shredded Cheese (I Use A Mixture Of Sharp Cheddar And A Mexican Blend), Divided
  • 10  Corn Tortillas

Preparation

Preheat oven to 375ºF.

In a skillet over medium heat, brown the ground beef. While beef is cooking, place a small amount of enchilada sauce on the bottom of a glass pan.

After the beef is thoroughly cooked, take off heat and stir in half the cheese and half the remaining sauce.

Place the tortillas in the microwave for about 20 seconds or until they are soft enough to roll without cracking. Fill each tortilla with the beef, roll up, and place in the pan. When done, top with any remaining beef, enchilada sauce, and cheese.

Bake for 15–20 minutes. Let sit for about 5 minutes before serving it to your happy family.
