Yummy easy breakfast filled with cheesy goodness that will fill you right up!
Ingredients
- 3 Potatoes
- Olive Oil, As Needed
- 4 Eggs
- Salt And Pepper, to taste
- 1 cup Shredded Cheese
- 2 Green Onions, Sliced
Preparation
Peel potatoes and chop into cubes. Fry in a skillet with olive oil until nicely browned.
Make 4 wells in the fried potatoes and put an egg in each one. Sprinkle salt and pepper over everything. Cover skillet with a lid and cook eggs for about 5 minutes.
In last minute of cooking time, add cheese and green onions and more salt and pepper if needed.
