This recipe takes less than 20 minutes to make and it’s super delish.
Ingredients
- FOR THE FAJITA SEASONING:
- 1 Tablespoon Cayenne Pepper
- 1 Tablespoon Paprika
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Cumin
- 1 Tablespoon Dried Oregano
- ½ Tablespoons Sea Salt
- ¼ Tablespoons Fresh Ground Pepper
- FOR THE CHICKEN FAJITAS:
- 1 Tablespoon Olive Oil
- 1-½ pound Chicken Thighs, Skinless, Boneless, Sliced
- 3 Bell Peppers (Red, Yellow, Green), Sliced
- 1 Lime, Juiced
- 1 Large Red Onion, Sliced
- 10 Flour Or Corn Tortillas
- 1 Lime, Cut Into Wedges
- 1 Jalapeno, Thinly Sliced
- 1 Avocado, Sliced
- ¼ cups Sour Cream
- ¼ cups Chopped Fresh Cilantro
Preparation
Mix fajita seasoning in a bowl. Set aside.
Heat oil in a large cast iron pan over medium heat. Add chicken and 1 tablespoon of fajita seasoning, then cook for about 6–8 minutes, stirring every minute or so.
Once chicken is cooked through and golden brown, move it to the side of the pan to make space for the veggies.
Add peppers, onion, lime juice and sprinkle with 1 teaspoon fajita seasoning. Cook for about 3–4 minutes, then toss well to combine.
Spoon chicken, onions, and peppers into warm tortillas. Squeeze lime juice and garnish with sliced jalapeno, avocado, sour cream, and cilantro.
