Description
Easy 30-Minute Chicken Stir Fry loaded with vegetables and tossed in a spicy Asian sauce.
Ingredients
- 1 Tablespoon Olive Oil, Divided
- 3 whole Lean Chicken Breasts
- ½ whole Onion, Sliced
- 2 cups Broccoli
- 1 cup Carrots, Julienne
- 1 cup Mushrooms, Sliced
- 2 cloves Garlic, Minced
- 1 Tablespoon Soy Sauce
- ½ Tablespoons Peanut Butter
- ½ teaspoons Sriracha
- 1 dash Fish Sauce
- ¼ teaspoons Sesame Oil
- ⅛ teaspoons Red Pepper Flakes
- ⅛ teaspoons Sesame Seeds
Preparation
Add half of the oil to a large skillet. Add chicken and saute until fully cooked, 4 minutes on each side. Take out of the pan and set aside.
In the same pan, heat the remaining ½ tablespoon of oil. Add onions, broccoli, carrots and mushrooms. Saute for 3–4 minutes until slightly tender. Add in garlic and saute for 1 minute.
Stir in soy sauce, peanut butter, Sriracha, fish sauce, sesame oil, red pepper flakes and sesame seeds. Bring to a low simmer and take off of the heat.
Garnish with extra sesame seeds and serve immediately.
