Description
Tomato, ham, garlic and eggs.
Ingredients
- 2 Tablespoons Oil
- 1 clove Garlic, Minced
- 1 Roma Tomato, Diced And Seeded
- 2 slices Deli Ham (thin Cut)
- 2 whole Eggs
- 1 Tablespoon Milk
- Salt And Pepper, to taste
- 2 Flour Tortillas
Preparation
Heat oil in a small skillet over medium heat.
Meanwhile, mince garlic; seed and dice tomato. Roll up the ham slices and slice them thinly (the end result looks like ribbons of ham).
Add garlic to the pan first and saute for a minute or two, making sure not to burn it. Add diced tomatoes and then ham. Let the mixture saute for 5 minutes.
Beat eggs in another bowl with the milk. After 5 minutes of cooking, pour eggs over garlic, ham and tomatoes. Let the eggs set a little and then start scrambling them. A little extra oil may be necessary, it depends on the type of pan. Add salt and pepper to taste.
Remove pan from stove. Toast the flour tortillas over the open flame until warmed. Spoon half the scramble into each tortilla and wrap. Enjoy.
