Description
Flaky puff pastry with fresh mission figs, goat cheese, fig jam and walnuts. A garnish of fresh mint leaves takes it to another level, but is certainly optional. Makes for a great snack, appetizer or dessert. In fact, I served it as part of brunch last weekend!
Ingredients
- 1 whole Puff Pastry Sheet, Thawed In Fridge For Three Hours
- 5 ounces, weight Goat Cheese, Room Temprature
- 2 Tablespoons Fig Jam
- 8 ounces, weight Fresh Black Mission Figs, Washed, Dried, Sliced In 1/2″-thick Rounds
- ¼ cups Walnuts, Roughly Chopped. More For Additional Garnish, If Desired
- 1 Tablespoon Butter, Melted
- ¼ cups Fresh Mint Leaves, Stems Removed, Roughly Chopped (optional)
Preparation
Preheat oven to 375 F. Divide thawed puff pastry into four fairly equal rectangular pieces and place on a baking sheet lined with parchment paper.
Spread goat cheese on each piece leaving a border around the edge. Add jam, figs and chopped walnuts. Brush figs and edges of puff pastry with melted butter. Slightly turn up the pastry edges to create a lip.
Bake for 18-20 minutes or until pastry is golden and puffy. Remove from oven. Garnish with chopped mint leaves and more walnuts, if desired.
