Description
This delicious and cheesy taco skillet is a one-pan wonder!
Ingredients
- 1 Tablespoon Olive Oil
- 1 pound Lean Ground Turkey
- ½ White Onion, Chopped
- 2 Tablespoons Taco Seasoning
- 1 can (14 Oz. Size) Fire Roasted Tomatoes
- 1 can (15 Oz. Size) Black Beans
- 1 can (8 3/4 Oz. Size) Whole Kernel Corn
- 1 cup Tortilla Chips, Crushed
- 2 cups Shredded Jack Cheese
- ½ cups Lettuce, Shredded
Preparation
Heat a large skillet with olive oil on medium-high heat. When hot, add turkey meat and cook for about 8 minutes. When meat is brown, add onions and taco seasoning and cook for about 5 minutes, or until onions become translucent.
Pour in the canned tomatoes, black beans and corn, as well as the crushed tortilla chips. Cook for 5 minutes, stirring occasionally. Top mixture with cheese and let sit for about 1 minute or until the cheese begins to slightly melt. Add the shredded lettuce on top and serve. Enjoy!
