I love taking these to work as an easy and healthy breakfast.
Ingredients
- 4 Whole Eggs
- 6 whole Egg Whites
- ¼ cups Milk Or Soy Milk
- 10 ounces, weight Chopped Broccoli
- 4 whole Low Fat Sausage Links, Chopped
- ¼ cups Shredded Cheese, More To Top
- Salt And Pepper, to taste
Preparation
Preheat oven to 400 degrees F.
Wisk eggs and milk together in a large bowl. Add broccoli, sausage, cheese, salt and pepper, mix well.
Spray muffin pan with cooking spray. Using a ladle, fill each cup to the top (this is enough to fill 12 muffin cups), carefull not to overfill. Sprinkle with shredded cheese.
Bake on the center rack for 20 minutes or until the tops are golden brown.
Theses freeze very nicely. I drop 2 or 3 egg-a-muffins in a sandwich bag and place in the freezer. Grab out on your way to work! Re-heat and enjoy!!
