Based on the best breakfast sandwich I’ve ever had, this everything bagel and lox casserole is loaded with all of the fixings for an amazing bite.
Ingredients
- 4 whole Everything Bagels, Diced Small
- 8 ounces, weight Smoked Salmon, Diced Small
- 1 bunch Scallions, Thinly Sliced
- 1 jar (3 Oz. Size) Capers, Drained
- 1 whole Fresh Tomato, Diced Small
- 5 whole Eggs
- 1 cup Milk
- 1 cup Whipped Chive Flavored Cream Cheese
- Salt And Freshly Cracked Black Pepper
- Garlic Powder, To Taste
Preparation
Get out a 9 x 13 baking dish and spray well with cooking spray. Add diced up bagels in an even layer. Then sprinkle the chopped smoked salmon, scallions, capers and fresh tomato evenly over the bagels.
In another bowl, whisk eggs, milk, cream cheese, salt, pepper and garlic powder together thoroughly. Pour it evenly over the casserole, then press everything down lightly to make sure the casserole is even and submerged. Cover it and refrigerate it overnight.
In the morning, preheat oven to 350ºF. Bake casserole for 45–50 minutes, until set and bagels start to crisp around the edges. Let cool and set for just a couple of minutes, then cut it and serve immediately. Enjoy!
