Description
Soft, chewy and crispy cookies that have just about everything: coconut, oats, chocolate and nuts! What could be better!
Ingredients
- 1 cup Butter
- 1 teaspoon Vanilla
- 1 whole Egg
- ¾ cups Brown Sugar
- 1 cup Flour
- ¼ teaspoons Salt
- 1 teaspoon Baking Soda
- ½ cups Oats
- ½ cups Coconut
- ⅓ cups Chopped Pistachios
- ⅓ cups Chopped Almonds
- ¾ cups Chocolate Chips
Preparation
Preheat oven to 350ºF and prepare a large ungreaased baking tray. Set aside.
In the bowl of your electric mixer, beat butter until smooth. Add vanilla, egg and brown sugar. Continue to mix on high speed until combined and smooth, about 2 minutes.
In a medium bowl, mix together flour, salt, baking soda, oats and coconut. Stir dry ingredients into butter mixture, until just combined. Stir in pistachios, almonds and chocolate chips.
Drop by spoonfuls onto a baking tray and bake for about 7–10 minutes. You are looking for cookies to be crispy and golden at the edges and lightly golden on top. These cookies are chewy, moist and delicious. Will keep for a few days in an airtight container and can be frozen.
