Ingredients
- 2 cups Okra, Sliced
- ½ cups Water
- ¼ whole Red Onion, Thinly Sliced
- 1 teaspoon Olive Oil
- Salt And Pepper, to taste
- ½ Tablespoons Butter
- 1 cup Cherry Tomatoes, Whole
- 2 whole Eggs
Preparation
Wash okra, cut both ends off and slice into thin rounds.
Heat the water in a small frying pan and add the okra, onion, oil, salt and pepper to taste. Cook for 10 minutes.
Add butter and cherry tomatoes, cook for 3 minutes. Add eggs, lower the temperature to medium low and cook for about 2–3 minutes or until eggs are done.
