Description
This Feta Mediterranean Hummus has some of my favorite flavors and it goes great as a dip for veggies, crackers or bread. It also works as a spread for sandwiches or wraps.
Ingredients
- 1 can (15 Oz. Size) Garbanzo Beans, Drained
- 4 ounces, weight Light Feta Cheese, Crumbled
- ¼ cups Green Olives (Trader Joe’s Spanish Manzanilla Olives With Pimentos)
- 2-½ Tablespoons Tahini
- 1-½ Tablespoon Lime Juice
- 1 Tablespoon (Rounded) Sun-dried Tomatoes
- 1 clove (Large) Garlic
- 1 dash Pepper
- 1 pinch Oregano For Garnish
- 2 Tablespoons Olive Oil
- 1-½ Tablespoon Water, Or More As Needed To Improve Texture
Preparation
In a food processor, pulse everything together, streaming in the olive oil and the water, adding more if needed. If you want a creamier texture, a little extra water helps. Enjoy with your favorite crackers or pita chips/bread and some fresh oregano for garnish.
