Light and fluffy grain-free pancakes.

Ingredients

  • 4 whole Eggs, Divided
  • ½ cups Almond Flour
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Vanilla Extract
  • ¼ teaspoons Salt
  • ¼ cups Agave

Preparation

Separate 3 of the eggs and add the egg whites to a bowl. Beat until soft peak stage. Add the rest of the ingredients to a separate bowl and mix together. Add the beaten egg white to the almond flour mixture. Fold until completely incorporated.

Spoon the pancake mixture onto a griddle, heated to a low heat. The pancakes take a while to set on top, which makes flipping them less messy. Serve immediately.
