Fluffy Whole Wheat Cinnamon Sugar Pancakes

Description

These pancakes are so fluffy like in a restaurant and taste great with fruit and honey. Feel free to add cut-up fruit, nuts or chocolate chips to the batter! Double the recipe for leftovers or company.

Ingredients

  • ¾ cups Milk
  • 2 Tablespoons Vinegar
  • 1 cup Whole Wheat Flour
  • 2 Tablespoons Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1  Egg
  • 2 Tablespoons Butter, Melted
  • 1 teaspoon Vanilla
  • Cooking Spray, Butter Or Coconut Oil, To Cook The Pancakes

Preparation

1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour.”

2. In a separate mixing bowl, combine flour, brown sugar, cinnamon, baking powder, baking soda, and salt. Whisk egg, melted butter and vanilla into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

3. Heat a large skillet or griddle over medium heat, and coat with cooking spray, butter or coconut oil. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
