Great appetizer to serve with your favorite Italian meal!
Ingredients
- 2 whole Tomatoes, Ripe
- ½ whole White Onion, Diced
- 3 cloves Garlic, Crushed
- ½ teaspoons Rosemary
- 1 teaspoon Basil
- 1 bunch Fresh Chopped Parsley
- ½ teaspoons Sea Salt
- ½ teaspoons Fresh Black Pepper
- 2 Tablespoons Olive Oil, Divided
- 1 whole Baguette, Sliced
- ½ cups Fresh Grated Parmesan Cheese
Preparation
In a bowl, combine tomatoes, onion, garlic, rosemary, basil, parsley, salt, pepper and 1 tablespoon of the olive oil. Stir to combine and set aside.
In a large skillet, heat the remaining olive oil over medium heat. Add bread slices (in batches if necessary) and cook each side until slightly crisp, about 2 minutes per side. Remove from skillet and arrange bread slices on a large baking tray. Top each piece of bread with tomato mixture and garnish with fresh Parmesan.
Put under a hot grill in the oven for just a couple of minutes until cheese is melted. Serve straight away.
