Description
These low-carb, lightly sweetened dairy-free fudgsicles are made with heart-healthy 100% dark chocolate. The best part? My older son devours them!
Ingredients
- 1 can (13 1/2 Oz. Size) Coconut Milk
- 2 ounces, weight 100% Chocolate (baker’s Chocolate)
- 1 whole Date, Pitted
- ¼ teaspoons Vanilla Powder
- ¼ teaspoons Vanilla Stevia
Preparation
Note you’ll also need a popsicle mold and sticks. Recipe makes 6 pretty standard size popsicles (see photo).
In a Vitamix (or other high-speed blender) blend coconut milk and chocolate until smooth. Blend in date, vanilla powder and stevia. Pour into the popsicle molds, put mold in the freezer and set timer for 30 minutes. Remove mold from freezer. Place sticks into the semi-frozen popsicles. Freeze for 2 hours. Serve!
