Description
Pasta nights are always so tasty, even more so when added to your favorite greens and tossed in a flavorful garlicky sauce.
Ingredients
- 1 package (13 1/4 Oz. Size) Whole Grain Thin Spaghetti
- 2 Tablespoons Olive Oil
- 3 whole Shallots, Thinly Sliced
- 4 cloves Garlic, Minced
- 1 cup Mushroom, Sliced
- 2 cups Kale, Chopped
- 1 cup Cup Chicken Broth
- Salt And Pepper, to taste
- Shaved Parmigiano Cheese, To Taste
Preparation
Cook pasta according to package instructions.
Meanwhile, heat oil on a frying pan and add shallots. Cook until fragrant, then add garlic. Add mushrooms and kale, and sauté for about 3–4 minutes, stirring frequently. Add chicken broth, salt and pepper to taste, and cover. Cook for additional 2–3 minutes or until just prior to a boil.
Add pasta to the garlicky kale sauce and gently stir to combine. Adjust salt if needed and garnish with fresh shaved Parmigiano cheese to taste.
