Description
This giant chocolate chip cookie is thick, chewy, and perfect for when you don’t want to bake up a whole batch!
Ingredients
- 2 Tablespoons Unsalted Butter
- 1 Tablespoon Caster/granulated Sugar
- 2 Tablespoons Light Brown Sugar
- 2 Tablespoons Beaten Egg
- ½ teaspoons Vanilla Extract
- ½ cups Plain/All-Purpose Flour
- ¼ teaspoons Cornflour Or Cornstarch
- ¼ teaspoons Baking Powder
- ⅛ teaspoons Baking Soda
- ¼ teaspoons Salt
- ¼ cups Chocolate Chips
Preparation
Preheat oven to 170ºC (325ºF or Gas 3). Line a baking tray with parchment paper or a silicone mat. Set aside.
Microwave butter until mostly melted. Whisk in sugars until combined. Add egg, and vanilla, and mix until combined. Add flour, cornflour, baking powder, baking soda, and salt, and mix until just combined. If the mixture is still a little runny, add another tablespoon of flour. Fold in chocolate chips.
Drop dough onto the prepared baking tray. Flatten out and shape into a circle. Sprinkle a few more chocolate chips on top, then bake for 15–17 minutes. The centre will still be a little under-baked, but it’s fine, it will firm up as it cools. Leave to cool on the tray for 10 minutes before cooling completely on a wire rack.
